Chunky Cranberry Fruit Mince Fudge

Ingredients

  • 2 cups Almond butter
  • 3/4 cup Coconut oil
  • 1/2 cup Maple syrup
  • 1/2 cup Almond meal
  • 1/2 tsp Salt
  • 1/2 cup Anathoth Farm Berry Fruit Mince
  • 1/4 cup Almonds, roasted and chopped
  • 1/4 cup Dried cranberries, roughly chopped

Method

  1. Line a 21cm square tin or ceramic dish with baking paper, ensuring to leave some overhang.
  2. In a medium bowl, whisk together almond butter, coconut oil and maple syrup to combine. Add almond meal and salt and stir until a smooth dough forms.
  3. Evenly press the dough into your prepared tin. Using the back of a spoon, create indentations across the surface - this will help the fruit mince to settle inside.
  4. Dollop over the fruit mince and spread evenly. Sprinkle over almonds and dried cranberries, and refrigerate for 4 hours or overnight, until set.
  5. When set, remove from tin and slice. Serve chilled and store in the refrigerator.
  6. To gift, stack bars and wrap in baking paper. Tie with string and leave in the fridge until ready to gift.
