Chunky Cranberry Fruit Mince Fudge

Ingredients
- 2 cups Almond butter
- 3/4 cup Coconut oil
- 1/2 cup Maple syrup
- 1/2 cup Almond meal
- 1/2 tsp Salt
- 1/2 cup Anathoth Farm Berry Fruit Mince
- 1/4 cup Almonds, roasted and chopped
- 1/4 cup Dried cranberries, roughly chopped
Method
- Line a 21cm square tin or ceramic dish with baking paper, ensuring to leave some overhang.
- In a medium bowl, whisk together almond butter, coconut oil and maple syrup to combine. Add almond meal and salt and stir until a smooth dough forms.
- Evenly press the dough into your prepared tin. Using the back of a spoon, create indentations across the surface - this will help the fruit mince to settle inside.
- Dollop over the fruit mince and spread evenly. Sprinkle over almonds and dried cranberries, and refrigerate for 4 hours or overnight, until set.
- When set, remove from tin and slice. Serve chilled and store in the refrigerator.
- To gift, stack bars and wrap in baking paper. Tie with string and leave in the fridge until ready to gift.
