Muffin Splits with Whipped Lemon Feta

A tasty weekend breakfast to add to your menu this Summer, using Anathoth Farm Caramelised Onion Relish, and topped with bacon and cheese.

Makes 2 whole muffin splits or 4 halves.

Ingredients

  • 50 g Mānuka-smoked shoulder bacon
  • 100 g Feta
  • 1 Tbsp Olive oil
  • 1, 1/2 Tbsp Lemon juice
  • 1 tsp Lemon zest
  • 4 Muffin splits, separated
  • 1/2 cup Anathoth Farm Caramelised Onion Relish

Method

  1. Heat a non-stick frying pan over medium-high heat. Add the bacon and cook for 4-5 minutes, flipping halfway, until crisp. Remove from heat and chop into small pieces.
  2. In a small food processor, blend feta, olive oil, lemon juice and lemon zest for 1 minute until smooth.
  3. When ready to serve, toast muffin splits. Spread with butter if desired, then divide the caramelised onion relish among each muffin split, followed by whipped lemon feta, bacon pieces and a sprinkle of lemon zest. Enjoy!
