Ingredients
Dough
- 1 & 1/2 cup Plain flour
- 85 g Unsalted butter, cold and cubed
- 1 tsp Sugar
- 1/2 cup Cold water
Mince
- 3/4 pottle Anathoth Farm Traditional Fruit Mince
Topping
- 1 Egg, beaten
- 1 tsp Icing sugar
Method
- Add the flour, butter, sugar and salt to a food processor. Pulse until you get the texture of fine breadcrumbs. With the processor running, slowly drizzle in just enough cold water until it forms a ball, you may not need it all.
- Remove the dough, form into a ball and wrap in plastic wrap. Refrigerate 10-15 minutes.
- Preheat the oven to 180°C.
- Lightly butter a 12 pan muffin tin.
- On a floured surface roll out the pastry to about 3 mm thick and use a 10cm round cutter to cut rounds and place each into the cups of the muffin tin so the edges are all even. Use your fingers to push into the base.
- Fill each pastry shell until almost full (About 2mm below the edge of the pastry).
- Re-roll out the remaining pastry and cut out shapes of your choice. Place them on top of the filling and brush the shapes with the beaten egg and sprinkle lightly with the icing sugar.
- Bake for 20 minutes, or until the pastry is golden brown. Allow to cool in the tin for 10 minutes before transferring to a cooling rack.
