This Smoked Chicken & Avocado Penne Salad with Anathoth Farm Caramelised Onion & Parmesan is the perfect lunch to take to work, or a simple light meal that the whole family will enjoy this Summer.

Ingredients

  • 250 g Dried penne pasta
  • 200 g Smoked chicken, shredded
  • 1/4 cup Anathoth Farm Caramelised Onion Relish
  • Balsamic vinegar
  • 2 Tbsp Extra virgin olive oil
  • 1 Avocado, diced
  • 1/4 cup Parmesan, grated
  • 1 cup Spinach, roughly torn
  • 1/2 Red onion, thinly sliced

Method

  1. Cook pasta according to packet directions.
  2. In a large salad bowl, whisk together relish, balsamic vinegar, and olive oil until combined. Add pasta along with remaining ingredients and toss to fully distribute.
  3. Serve chilled or at room temperature.
